1 banana, peeled, sliced, and frozen 香蕉一隻:去皮,切片及放入冰庫中冰凍

  1. Fifteen minutes before making the milkshake, take the banana slices out of the freezer.

  2. Put all ingredients (except the whipped cream or whipped topping) into the cup of a blender.

  3. Put the lid on and blend until all the ingredients are well mixed. The mixture will be thick.

  4. Transfer the mixture into a glass and add whipped topping on top as a garnish.

南瓜玉桂杏仁奶 Pumpkin Spice Almond Milk

1 cup (8 oz.) almond milk 杏仁奶 1 杯( 8 安士或 237 毫升 )
4 tbsp. pumpkin puree from a can 罐頭南瓜蓉 4 湯匙
1 tsp. brown sugar or to taste 黃糖 1 茶匙或你喜愛的份量
1 tsp. rum or 1/2 tsp. vanilla extract 蘭姆酒 1 茶匙或香草精 1/2 茶匙
1/4 tsp. ground cinnamon or to taste 玉桂粉 1/4 茶匙或你喜愛的份量

Garnish and Optional 裝飾材料 ( 可以不用 ) :
Whipped cream (sweetened) 已打發和加甜的鮮奶油
More ground cinnamon 更多玉桂粉


  1. Heat almond milk in a microwave-safe mug for around 3 minutes until it becomes hot but not boiling.

  2. Add all other ingredients (except those for garnish) and stir till well blended. The pumpkin will dissolve into the milk.

冷凍海鹽咖啡 (手搖淡奶奶蓋版) Chilled Sea Salt Coffee

Ingredients 材料 (This recipe makes one serving 一杯的份量):

1 cup chilled coffee 冷咖啡1杯
3 frozen coffee cubes 咖啡 "冰" 塊3顆
Sweet syrup to taste and optional 糖漿適量或可以不用 (cook equal parts of sugar and water until all the sugar has dissolved, store covered in the refrigerator for later use 用 1 : 1比例的水和白糖煮成後加蓋放冰箱中冷藏 )

3 tbsp. chilled unsweetened evaporated milk 從冰箱取出的罐頭淡奶3湯匙
¼ tsp. extra virgin coconut oil 椰子油1/4茶匙
¼ tsp.fine sea salt or to taste 細海鹽1/4茶匙或你喜歡的份量
3 drops apple cider vinegar or lemon juice 蘋果醋或檸檬汁3滴

Garnish: cocoa powder or a little matcha powder (optional) 可可粉或一點點抹茶粉 ( 裝飾用或可以不用 )


  1. Preparation 預備 :
    Chill a small lidded glass jar in the fridge overnight. 把一小有蓋玻璃瓶 ( 上了蓋 ) 放入冰箱一夜。

    Make coffee cubes and store in the freezer to be used later. 把一杯咖啡倒進製冰模中,放進冰庫,凝結成咖啡 "冰" 塊備用。

    Chill the canned evaporated milk in the fridge overnight. 把罐頭淡奶放進冰箱中過夜備用。

    Make a cup of coffee and chill in the fridge. 另沖一杯你喜愛的咖啡放進冰箱中備用。

  2. Make coffee base 做咖啡底 :
    Add your desired amount of sweet syrup (if used) to the chilled coffee. Stir to mix well. 如選用糖漿,把糖漿加進冷咖啡中拌勻。

    Put three frozen coffee cubes into a tall glass. 把三顆咖啡 "冰" 塊放進一高玻璃杯中。

    Pour the (sweetened) coffee onto the coffee cubes and store in the fridge. 把咖啡倒進高玻璃杯中的冰塊上。把這高玻璃杯放回冰箱中備用。

  3. Make milk foam 做奶蓋 :
    Take the chilled glass jar out of the fridge. Pour unsweetened evaporated milk into the jar. Add coconut oil, sea salt, and apple cider vinegar (or lemon juice). Put the lid on tightly. Hold the lidded jar at the top and bottom (don’t hold the body of the jar) and shake vigorously for one minute or until the volume of the milk inside has doubled.

    把小玻璃瓶從冰箱中取出、開蓋。加入淡奶、椰子油、海鹽和蘋果醋或檸檬汁。上蓋後拿着瓶蓋和瓶底 (手指不要碰到瓶身) 用力搖一分鐘,至看到奶在瓶中的體積變成雙倍大。

    Take the chilled coffee base out of the fridge. Open the jar and pour the milk foam on top of the chilled coffee. Garnish with some cocoa powder or a little matcha powder if desired. Served immediatly.


1. The major reason for making my own sea salt coffee was my observation of how it was made at a chain café last week. The barista (a) poured a little very hot coffee into a disposable plastic cup and then (b) added ice and water (sweetened, I assume) to dilute it. On a busy day, (b) did not follow (a) immediately. I did not feel 100% comfortable with the hot coffee sitting in the plastic cup like this.

2. If you do not keep cream as a staple in your fridge, this method of making milk foam is for you. Using evaporated milk is also more economical. I always have evaporated milk in my fridge for my morning coffee.

3. To me, cleaning a glass jar afterwards is easier than having to wash an electric blender or the attachments of an electric mixer.

4. Keeping the jar chilled, adding coconut oil and vinegar, and not holding the jar body while shaking it are the techniques that help form and keep the volume and creamy consistency of the foam.

5. Sweetening a chilled drink by adding some sweet syrup to it is better than adding granulated sugar because it is harder for sugar to dissolve in chilled liquid. I learned this from a fast-food place employee when I was in secondary school.

6. I always save the glass jars after finishing the jarred sauces bought in an Asian supermarket. This method of making milk foam is very handy to me.

Healthful Pina Colada Smoothie

Ingredients for One Serving

1/2 of an 8-oz. can of undrained crushed pineapple
4 oz. chilled coconut milk (a brand is Silk)
1 ice cube
3 tbsp whipped topping
1 tbsp barley powder (optional)


  1. Put the ice cube in a blender.
  2. Add crushed pineapple with juice and optional barley powder.
  3. Add coconut milk and whipped topping.
  4. Cover the blender and blend until you do not hear the blades hitting the ice pieces anymore.
  5. Pour smoothie into a glass and enjoy!

Iced Tea with Flavored Ice Cubes


A few Earl Grey teabags, a few green tea teabags, water, granulated sugar, and lemons


  1. Making the flavored ice cubes:

    Boil enough water for the ice cubes and dissolve some sugar in it to make enough sweetened water for the ice cubes. Set aside to let sweetened water cool off.

    Wash enough lemons for number of ice cubes one wants to make. Slice lemon and cut each usable thin slice into six wedges. Put one wedge into the space for each ice cube of ice cube trays to be used.

    Pour the sweetened water into the ice cube tray spaces and put trays into the freezer.

  2. Making the iced tea:

    In a clean pot, boil enough water for making the tea. Put in the Earl Grey and green tea teabags. Let the tea steep for a while. When it is cool, discard the teabags, pour the tea into a pitcher. Put the pitcher into the refrigerator.

  3. Serving the iced tea with the flavored ice cubes:

    Put enough ice cubes into a tall glass, pour the iced tea into the glass.

Green Tea Latte

Ingredients for Two Servings

3 teaspoons of green tea powder
1/2 banana
1 cup cold milk
3 tbsp. frozen whipped topping
1 to 2 ice cubes


  1. Peel the banana and slice it thinly into a blender.
  2. Add the green tea powder to the blender.
  3. Add all other ingredients to the blender.
  4. Cover the blender and blend until smooth.
  5. Serve in two tall glasses.

I developed this recipe myself after having a green tea latte at a local teahouse. Making it at home with the additional half of a banana makes the drink more healthful. Moreover, it definitely beats paying more than two US dollars for one serving outside.

Peach and Pineapple Smoothie

Ingredients for Two Servings

1 peeled peach (fresh or drained from a can)
7 pieces of pineapple chunks from a can, drained
8 oz. low-fat plain yogurt
4 tablespoons sweetened condensed milk
2 ice cubes


  1. Cut the peach into small pieces and put them into a blender.
  2. Add the pineapple chunks to the blender.
  3. Add the ice cubes to the blender.
  4. Add the condensed milk and yogurt to the blender.
  5. Cover the blender and blend until smooth.
  6. Serve in two tall glasses.

Homemade Frappuccino


Ingredients for Two Servings

1 envelope of cappuccino mix (0.82 oz)
1 cup cold milk (8 oz.)
2 ice cubes
3 talespoons whipped topping
Additional whipped topping (optional)


  1. Put ice cubes in a blender.
  2. Add cappuccino mix.
  3. Add milk and whipped topping.
  4. Blend until you do not hear the blades hitting the ice cubes anymore.
  5. Pour frappuccino into a glass. Add more whipped topping on top if desired.
